Goat - The next Kid on the Block?

Goat - The next Kid on the Block?
With every passing day, goat meat is featuring more and more in recipes, cookery programmes and restaurants. Already enjoying huge growth in the US, goat is set to be a key part of any menu. Served up at some of Britain's top restaurants such as St John and Quo Vadis in London and Flinty Red in Bristol, chefs are jumping at the chance to put kid on their menus, given its versatility and subtle flavour. Of all the meat proteins, goat is one of the leanest, lowest fat products on the market. Bri-tal Foods has a goat burger made with meat from free range kids reared in SW England. It is also possible to link the sales of the product with a charity "Kids for Kids" which gives goats to families in poorer countries so that they can benefit from the milk and by-products by rearing the animals. A great product and a great story!

Traditional Hand-made pasta from Italy

Traditional Hand-made pasta from Italy
Pandane pasta is hand-made in Brescia from the same Monococco wheat that has been cultivated on local farms for over 5,000 years Local ingredients, many organic and with D.O.P. status, are mixed by hand to form the various stuffings. The pasta parcels, such as Spiga opposite, are stuffed and shaped by hand Spiga means “ear of wheat” This method of manufacturing means that the stuffings can have large particulates, which significantly enhances the product appearance on the plate. Filled pasta fillings should reflect the seasons of the year, so here are some suggestions: Autumn/Winter Gorgonzola & Chicory Bacon & Scamorza cheese Pecorino & Pear Raw Ham Bagoss Cheese Walnut & Gorgonzola
