Filled Pasta - long overdue on centre stage?
For a long time, filled pasta in the UK was identified as a low quality product, usually found in cans. But no longer, as all the current indications are that this sector of Italian food in the UK is moving into more premium offerings, despite the current economic turmoil. In some ways, it was inevitable that as pasta in the UK became less exciting and more humdrum despite its “healthy” and convenient image, customers would look for another format to re-ignite their love of this product.
New and unusual versions of filled pasta, hand finished and with DoE ingredients and fillings such as lobster and crab, cheese and pears, and venison, these pastas are beginning to appear on various mainstream menus. Mexican - the new kid on the block!
The Mexican revolution has started!! Both here and in the US, Mexican food is growing at a phenomenal rate. In the US, Mexican food-service sales are up 9% overall, with Chipolte Mexican Grill up 20.7% against last year. In the UK, the entry into the market of Wahaca, Chilangos and Benito’s Hat, alongside the long-established Chiquito’s, has served to raise the profile of this sector and introduce the experience to a wider audience. Taco Bell is looking to re-enter the UK market with an initial store in Bluewater, so they clearly see a new opportunity to bring the brand back into the UK.
Mexican offers more lively and punchy flavours than Tex-Mex and is almost a “US variation” on the UK’s well-established Indian spice/flavour profile, so customers should easily adapt to this style of product.

Spanish Tapas - a growing opportunity to share?
